How to Make the Perfect Steak

There is a definite technique to making the perfect steak. Like most of the best “tried and true” cooking methods, this technique is French.  Whether you are using filet mignon or sirloin cuts, the following will ensure perfect results every time!

Ingredients: Four 3/4″ to 1″ thick filet mignon or sirloin steaks; coarse salt;  olive oil

Directions For Making The Perfect Steak: Serves 4: Take steaks out of the fridge for up to an hour before cooking. Preheat oven to 400F. Pat steaks dry with paper towels and season with coarse salt. Coat the bottom of a frying pan with a thin layer of olive oil and heat until it reaches about 400F. The key is that the oil has to be hot in order to sear the meat and seal in all the juices. Place steaks into pan and do not flip until they lift off effortlessly. They’ll tell you when they’re ready! Sear the other side, and transfer to oven-proof pan. Place in oven and cook for 6 minutes for medium rare, 9 minutes for medium, and 11 minutes for well done. Remove steaks from the oven and let rest for 10 to 15 minutes before carving.
