Rob’s Curry Chicken Spaghetti

Tired of traditional spaghetti? For a departure from the standard recipe, try something with an exotic flare! This recipe was given to me by a friend; and it’s a great example of fusion cuisine that you can try at home. Good curry powder is the key, along with fresh or powdered ginger, and honey, to round out the flavours. Serves 4

Ingredients: 4 tbsp olive oil; 1 package lean ground chicken; 1 green bell pepper and 1 red bell pepper; 2 bunches green onions; 1 medium white onion; 2 cloves garlic; 1 680 ml jar of Passata di Pomodoro or Molisana strained tomatoes; 3/4 C hot water; honey; 2 tbsp hot curry powder; 1 inch cube of chopped, fresh ginger, 1 tsp ground ginger; 3 tbsp honey; 450 g (1/2 package) whole wheat spaghetti or rice pasta; small sprigs of coriander for garnish, optional.

Directions: Chop white and green onions, bell peppers, garlic and ginger. In a skillet, heat olive oil and cook the onions until golden. Add peppers and ground chicken and continue cooking until meat is almost done. Toss in the garlic and ginger, and stir for 2 minutes, or until chicken is fully cooked. Add tomatoes and the water, ground ginger and curry powder.  Lower heat and simmer for 10 minutes.  While the sauce is simmering, bring a pot of water to a boil and cook whole wheat pasta as per package instructions. Strain pasta, rinse under cold water, and allow to drain. Serve sauce over pasta and garnish with coriander if desired.
