2 C water 1 C couscous 1 english cucumber, chopped 2 large tomatoes, chopped 1/2 red onion, diced 1 C Kalamata Olives, pitted 1/5 C feta cheese, crumbled parsley, to garnish  Dressing:  1/2 C Olive oil 1/4 red wine vinegar salt pepper   Directions: Bring 2 C of water to a boil.  When water is boiling, turn off heat and pour in 1 C couscous. Just back from a Caribbean paradise, I am experiencing slight withdrawal from all of the exotic and wonderful foods I encountered.  One of my favourite drinks was the Mojito- a refreshing blend of rum, sugar, lime juice, club soda and fresh mint leaves.
