Salmon Fit For A King

Ever since I created this dish, my husband insists on having it once a week!  

It is an explosion of flavour.

I like to get fresh salmon from my fave fish monger, but in a pinch you can use frozen fish. Serves 4




4 portions boneless fresh salmon

4 T olive oil

2 T fresh ginger, minced

2 T fresh garlic, minced

1 T dried parsley

1 generous handful grape tomatoes, whole

1/2 a small red onion, minced

½ C (Kellogg’s) cornflake crumbs, for coating the salmon

juice of ½ a lemon

juice of ½ a lime

drizzle of maple syrup/corn syrup (optional, to balance the acidity of the citrus and tomatoes)

fleur de sel or coarse salt, to taste

black pepper to taste

chili flakes to taste

2 T unsalted butter

1/8 C coriander, chopped

1/8 C chives, chopped


Preheat oven to convection 375F

In a medium casserole dish with a lid, place olive oil, minced garlic and ginger. 

Roll the salmon portions in the corn flake crumbs and place into dish, rolling in the oil and ginger/garlic. Toss in tomatoes and red onion.  Add lemon and lime juices, drizzle with maple syrup if desired, season with salt, pepper and chili flakes, and divide the butter into dollops on top of the salmon,and sprinkle any remaining corn flakes crumbs on top.  Bake covered for 15 min (for smaller portions of salmon);  then remove cover for the last 5 min of cooking time. Garnish with coriander and chives…voila!
