Lara’s Vanilla Birthday Cake

It might not look fancy, (cake decorating is not my forte), but this vanilla birthday cake is luscious and incredibly delicious. I find purchased baked goods to be far too sweet for my liking, and  wanted to make a cake of medium density, mellow sweetness and true vanilla flavour. You can make this cake as a snack or dress it up with vanilla or chocolate icing and seasonal fruits for a fancy dessert. What better occasion to put a little extra love into your menu than a birthday?

Preheat the oven to 350F


3 eggs, 1/2 (1/4C) stick butter, 3/4 C sugar, 1 C plain yogurt,  1/2C canola oil, 1 pkg vanilla pudding, 2C flour, 1 tsp baking soda, 1 tsp baking powder, pinch salt, 1 tsp pure vanilla extract.

Directions: in a stand mixer, begin mixing eggs at low speed and add ingredients in the order listed above, waiting long enough between the addition of  ingredients until everything is incorporated. When the batter is smooth, pour it into a greased 8X8 cake pan (I use a glass one but aluminum or ceramic would work too).  Bake at 350F for 35 minutes or until a toothpick inserted into the centre comes out clean.  Decorate for your occasion once cooled.  Freezes well.
